I don’t usually talk about calories and calorie counting.

The way I see it  (if you are one of my clients) is that you already know  you are getting WAY too much starch in your diet, and usually not enough proteins, healthy fats and cooked vegetables.  

When you replace the starch (breads, rice, pasta, beans, sodas, tortillas, sugar, cereal, etc.) with proteins, fats and vegetables (plus a little fresh fruit), so many  health issues and symptoms clear up, sometimes overnight!  That happens without counting a single calorie, as the calories are automatically reduced by replacing high calorie empty foods with lower calorie, nutrient-dense foods.

But there are now many of you reading this newsletter who are not clients of mine directly, so here’s a few words on calories….

It takes an extra 3500 calories (above what is needed for daily use) to put on a pound of fat.  Conversely, you have to burn off 3500 calories to lose a pound of fat.  

Sounds pretty simple, and it CAN BE SIMPLE indeed by following the golden rule of my Diet For Human Beings:  Humans are hunters and gatherers.  We are not grazers of grass and grass seeds (wheat, rice, corn) and we never ate anything sweet except a bit of fruit or fingerful of honey.  

We hunted animals, ate all their fat and organs, and gathered weeds, eggs, mushrooms, tubers, flowers, nuts, seeds and the occasional fruit.  Coconuts were also a huge factor if we lived in an equatorial climate.  And, living equatorially, we ate more fruit than our northern or southern neighbors.  (How much fruit do you think grows in Sweden?)

When we violate our million year old eating history, bad things happen to us, such as obesity, diabetes, arthritis, cancer, heart disease, and basically feeling and looking badly.  The ONLY way out of this health trap is to stop eating vegetable fats (see article above) and to stop eating grains and sugars.  Your body can and will change very quickly if you feed it the fuel it was meant to burn - proteins, fats and some specific carbs.
